Rutabagas

Don’t worry, this is not a 3000 word essay on the joys of root vegetables, I’ll leave that up to my good friend here. But in brief:

I was doing my Sunday morning shopping and was in the mood for some roasted parsnips to go with my dinner. HEB was out. And desperate for another root vegetable I panicked and grabbed a couple of rutabagas.

Nasty looking things all lumpy and green and purple. But once sliced up into one inch cubes, coated with olive oil, salt, pepper and Herbes de Provence and roasted in a 400 degree oven till golden brown….

Well DAMN!
